Chicken Totchos


Whole chicken
Lime Juice
Brazen Chicken Rub
Tater tots (i.e. Alexia Crispy Potato Puffs)
Mexican blend cheese
Pico de Gallo
Queso fresco
Chipotle sour cream

Pico de Gallo
1 jalapeño diced
½ medium red onion diced
½ bunch cilantro chopped
¼ teaspoon salt
1 teaspoon lime juice
10-12 medium tomatoes diced and seeded

Throw in food processor and pulse about twenty times to get the right consistency.


Braise whole chicken in lime juice
Pull and remove skin after cooking low and slow for 12 hours at 225°
Season with Brazen Chicken Rub and salt to taste
Bake tater tots per package directions
Cover tater tots with drained pulled chicken, Mexican blend cheese, fresh Pico de Gallo, crumbled queso fresco, and chipotle sour cream.

A healthier version of this is to serve the chicken on salad greens in place of tater tots!
