The winner of Gambardella’s Great Pizza Throwdown 2013!
Small pizza dough from Gambardella’s about 7 oz
2 Tbsp freshly chopped garlic
2 Tbsp extra virgin olive oil
4 oz cream cheese, diced
3 oz cooked chicken breast, seasoned and diced
1/3 cup sliced canned jalapeno
1/3 cup canned pineapple chunks
1/3 cup shredded mozzarella cheese
Salt and pepper
Let dough sit until room temp.
Preheat oven to 450.
Brush a thick sheet pan with oil.
Gently stretch the pizza dough to about 10 inches, mostly working the edges so the middle doesn’t get too thin
Set the dough on your sheet pan.
To the dough, apply minced garlic with oil to the dough, mostly away from the middle.
Add salt and freshly ground pepper. Just toast the top of the crust and remove from oven
Spread ingredients evenly over the pizza crust, shredded mozzarella last.
Bake until lightly browned and peek into the crust to make sure not it’s not doughy
Sprinkle with Romano, cut and enjoy!
