Pizza Dough (frozen or prepared dough is okay)
1-2 Tomatoes (sliced)
1 Handful Fresh Basil leaves
1 Ball Mozzarella Cheese (sliced)
Prepare grill by placing a charcoal chimney lighter full of lit charcoal along 1/3 of charcoal grate perimeter or along 1 side of square grill charcoal grate and place a pizza stone opposite the charcoal. Leave air vents fully open and bring grill temps as high as you can, preferably over 375of. Use chips, pellets or wood for smoke (if desired)
Stretch dough out to desired size and arrange tomato slices, mozzarella slices and basil leaves evenly on dough. Drizzle with olive oil.
Sprinkle a small amount of corn meal on pizza stone and using a large spatula or pizza peal, place pizza on the stone. Check on pizza after a few minutes, and turn pizza 180 degrees if the edge nearest the charcoal is browning quickly. Pizza is down when cheese has melted or crust has reached desired browning. This will usually take from 7-10 minutes depending on temperatures attained inside grill.
