1 onion chopped small and caramelized in a separate pan with 1 Tbsp oil for about 15 minutes on medium to low heat
1 Tbsp fresh garlic minced
1 Tbsp oil
1 Tbsp butter
1 cup peas
1 cup prosciutto, very thinly sliced then chopped
Salt & pepper
1 ½ cup cream or half and half
2 Tbsp freshly grated parmesan or asiago cheese
Nutmeg (ground or whole nutmeg grated with a zester)
Heat a large sauté pan on medium with oil. Add garlic and cook for a short time until just a little color.
Add butter and just melt. Add the cooked onions, peas and prosciutto and stir until just warm.
Add the half and half or cream and reduce for about 3-5 minutes. Add grated cheese and salt and pepper
Add cooked penne or other pasta to the pan until piping hot.
Plate and add freshly grated cheese, sprinkle with a pinch of nutmeg.
