Lisa G’s Pasta Bolognese

1 onion chopped
½ cup sliced and chopped pancetta
½ cup minced carrot
½ cup chopped celery
2 TBSP minced garlic
2 TBSP or more olive oil
1 lb ground beef
½ cup white or red wine
1 cup tomato sauce
½ cup chicken stock
Pinch of cinnamon
Freshly grated nutmeg
Pinch of oregano
Pinch of thyme
½ cup or more heavy cream or half-and-half
½ cup grated parmesan

Cook onion, pancetta, celery and carrots in olive oil over medium heat for about 15 minutes.

Add ground meat and cook for 15 minutes more. Add wine and simmer for about 2 minutes. Add chicken stock and tomato sauce and cook for a few minutes.

Add half-and-half or cream and cook until just hot, do not reduce. Stir in spices and serve right away with your favorite pasta topped with freshly grated Parmesan or Romano cheese.
