From the Gambardella Family
2 1/2 lbs ground Moose meat
2 1/2 lbs ground pork
1/4 cup paprika
1/4 c salt
1/2 c ground black pepper
1 cup granulated garlic dry
1/4 c ground fennel
1/4 cup whole fennel
2 cups water
Heat the oven to 350
Mix all ingredients together with your hands or slowly
with the paddle attachment.
If you use your hands disposable gloves are recommended.
spread in a baking dish so meat is about 1 inch tall.
Dot some finger holes in the center of the pan
so the middle cooks well.
Cook until the inside temp of the meat reaches 165.
Cool chop and enjoy in all your favorite recipes:
with pasta sauce, on pizza, serve in a sandwich
with caramelized onions and spicy mustard.
