Creamy Turkey Dill Soup

In a pot heat half and half with asiago until combined, then set aside
1 cup asiago
1 Qt half and half

In the final large pot make roux:
1/2 cup butter
1/2 cup plus 1 TBSp flour all purpose
Heat and stir a few minutes until combined and cook over medium heat for five mintes while stirring constantly.

In a large skillet

1 onion, chopped and cooked with 1 Tbsp Oil
2 cups diced cooked turkey

salt and pepper to taste
cook onion and oil for about 5-10 minutes
add turkey, salt, pepper, until just warm

Put it all together:
in the big pot with roux, slowly add the creamy mixture of dairy and cheese, incorporate with a whisk.
then add in the turkey and onion mixture

Finish with 1TBSP dill and add 2-3 cups of turkey or chicken stock.

optional: add 1-2 cups peas
